Mustard-Spinach. HEIRLOOM. One of the most mildest mustards. An early maturing flavorful nutritious vegetable. Milder than regular mustard greens, this variety has thick, smooth leaves on upright, heat and cold tolerant plants. One of the mildest mustards, the leaves are smooth and make a fine spinach substitute, especially in the fall. Seeds germinate and grow quickly in late summer heat, and mature to tender sweetness in cool weather. Thinnings are delicious as fresh snacks or in salads. Usually cooked as greens but can be used raw in salads like spinach. As easy to grow as it is rich in vitamins and minerals. Sow from early spring through fall.
